Get your daily does of greens with real food! Cooked down for easier digestibility and added feta cheese (or salt if dairy free) for flavor. An excellent side dish for a protein of your choice. Bonus: Cook the greens at a simmer for 30 minutes, covered, and drink the vitamin and mineral packed broth.

Servings: 1-2

Prep Time: 5 minutes

Cook Time: 5 minutes


Ingredients

3 pounds mixed greens, like endive, chicory, dandelion and spinach

4 liters of water, for boiling

2 tbsp. Olive oil

Lemon juice, for seasoning

Sprinkle of Crumbled feta (if dairy free, add sea salt to taste)

Instructions:

1. Clean the greens by washing them under cold water to remove any dirt or sand. Cut them in half and add to a large stockpot of boiling water. Boil for 4-5 min or until tender.

2. Strain the greens and Transfer the greens to a serving bowl and drizzle olive oil, lemon juice, and feta. Serve hot or warm
