Beet Greens Pesto

Don't throw away those beet greens! Not only are they super nutritious, they can be used for so many things - including a delicious pesto. Perfect for pasta or a dip!

RECIPE CARD


Servings: 4-6

Prep Time: 10 minutes

Cook Time: 0 minutes


Ingredients

2 cups beet tops and stems

 ⅓ cup pine nuts, or any seed if you are nut free

 2 garlic cloves

1 handful of fresh basil

 ½ cup extra virgin olive oil or avocado oil

 ½ cup parmesan cheese

 ⅛ teaspoon sea salt (or to taste)


⅛ teaspoon black pepper

Instructions:

1. Wash, dry (make sure they are pretty dry), and cut beat greens into small chunks/pieces

2. Add all ingredients to a food processor and blend until desired consistency (add more olive oil if needed).


3. Serve over pasta or use as a dip with fresh veggies
